Do you make your own gnocchi? I've not had much success with it so far, so I use shop-bought gnocchi, cook and fry it so they are like mini roast potatoes. The sauce I'm sharing today is lush. In one of the Facebook groups I'm in someone asked what kind of vegan pasta sauce can you buy to make a pasta bake. Something you just throw in and walk away. I said, why buy a sauce, just throw a few vegetables in a roasting tin for a wee while, then just throw in some uncooked pasta, tinned chopped tomatoes and stock and walk away. You end up wth a rich pasta bake, where the flavours surpass anything in a jar and heathier too.
If you can't be bothered chopping veg, just throw in some sweetcorn, cherry tomatoes and spinach at the same time as the pasta. Try it and let me know what you think! We love it!

Doesn't this look good. I do like a chunky soup that is almost like a stew. This is made in an instant pot, but could be made on the cooker top. I know know these are just the new pressure cooker. Do any of you have one? What do you think? I remember being scared of the hissing shaking thing that was my mum's pressure cooker when I was a child. It was like a metal dragon sitting on top of the cooker.
