Puff pastry is so versatile. It's a great product to have in the fridge, especially the ready rolled (as I can never roll a perfect rectangle, can you?). This time I made mini snacks. Don't you just love mini food for nibbling?
I'd made some of these with a different filling for the lifestyle section of the M&S website (Inspire me), but this time I decided to make something with the flavours of Greek spinach and feta spanakopita. If you haven't made my roast vegetable, veggie sausage and chickpea bake you really should. Super easy as it's all made in a roasting pan for minimum effort but maximum flavour. Serve it with mashed potato or just some crusty bread.
